This Diabetes Awareness Month, we asked our customers to send in their questions for Dr Helen Mitchell on all things chocolate and healthy living and we met up with her to discuss your questions in detail. 

Helen is a consultant food technologist with over 30 years’ experience of working with novel and functional food ingredients including sweeteners, polyols, bulking agents, probiotics, prebiotics and salt replacers. She is an industry expert in replacement ingredients for sugar, salt and fat and the development of “healthier” food products and dietary supplements for the food and pharmaceutical industry.

Helen has published over 100 peer-reviewed articles and food science/technology handbooks and has been a visiting lecturer and examiner in food science for the MSc and BSc courses in Food Science and Nutrition at Oxford Brookes University. She is an Associate Member of the Royal Society of Medicine and is committed to effective communication across the disciplines of food science, food technology, medicine and nutrition.
