- 1/2 cup oats
- 1 cup soft dates, pitted
- 1/2 cup peanut butter or other nut butter if you prefer
- 1 bar of Pure Heavenly fruit and nut bar (85g)
- 1/2 cup dried cherries
- 1/2 cup dried cranberries
- 1/2 cup chopped dried apricots
Heat a pan over medium high heat, and toast the oats for about 3-4 minutes, or just until the oats start to look toasty. Remove from heat and let cool.
In a food processor, combine the dates and peanut butter. Process the mixture until the dates are smooth.
Place the toasted oats and dried into a bowl and then add the date and peanut butter mixture, combine into the dough.
Transfer the dough to a large mixing bowl, and add the cherries, cranberries and apricots. Chop chocolate into desired pieces Stir with a spatula, or mix with your hands.
If the mixture is too moist, add additional oats. If is it too dry, add a few drops of water. The dough should be sticky, but stiff enough to roll out.
Transfer the dough to a parchment paper and roll or shape it into a long rectangle.
- Set in the fridge and then chop into pieces and serve. Enjoy!
